Quinoa Mini Banana Muffins Bake 20 min Makes 48
2 Over ripe bananas Preheat
oven to 335 degrees. Place paper liners in tins
2tsp.lemon juice Mash
bananas and lemon juice together and set aside.
2 cups quinoa flour Sift
flour, sugar, soda, baking powder and salt in bowl.
1 cup sugar Pour
the milk, into a container and add egg or 2 TB ground flax seed, plus 2 TB.
Water, vanilla and oil
1/2 tsp baking powder
1 level tsp. baking soda Make
a well in the center of the dry ingredients
3/4 cup milk (soy, rice, almond) and
slowly until combined.
1/2 tsp. salt gently
folds in the bananas, do not over mix.
2 tsp. vanilla extract Spoon the mixture into the
prepared muffin tin.
2 egg or flax seed meal
1/ 4 cup vegetable oil
Food Storage and Allergies
When storing food storage
one must think about what your allergies are in order to be successful. If you
cannot eat wheat then there are other grains that you can substitute. And there
are many wonderful books on Gluten Free Cooking. If you cannot afford to
purchase one then go to your local library and copy some of the great recipes.
If you cannot drink cow’s milk then your choices are soy, rice, almond and
coconut milk, something that many of us did not have years ago. One thing to
know about soy is you should use organic soy as soy absorbs pesticides more
than any other crop. When purchasing grains choose non-GMO (genetically
modified organism) so my advice is use Organics whenever possible.
